CharBella Cakes is located in Sydney's South West in beautiful Spring Farm and deliver all over Sydney.
An award-winning expert in customising cakes, cupcakes &/or cookies for your special occasion - from weddings to christenings to kids and adult birthdays and more.

Meet Nicole
Hello! Thanks for stopping by. Here's a little insight about me - what I do, why I do it and why baking is my passion!

I’m the face/lady/baker behind CharBella Cakes. I’m a qualified Pastry chef, who learnt her trade on many a chilly morning in Hobart, Tasmania.
​
In April 2001, I loaded up my car and drove all the way to Sydney, where I completed a Diploma in Patisserie at Le Cordon Bleu while working part time at Mezzapica Cakes in Leichhardt. I then moved onto working full-time at St George’s League’s Club in Kogarah for the next 4 years.
​
While here I met Mr CharBella and we married in 2006, back in Hobart, and yes it was still a chilly day!
​
During August 2008, we welcomed our first daughter Charlotte, then another daughter, Isabella in March 2011. When Isabella was 18 months old, my life took a turn into the ‘black fog’ of PND and with the help of a great psychologist and her goal settings, I came out of it a much stronger person. Around this time, we concluded that me going back to work as a Pastry Chef wasn’t going to suit our family life.

In September 2012, I registered the name CharBella Cakes, with a little help from Charlotte and Isabella and 12 months later I officially registered as a home-based commercial kitchen with Camden Council.
The reason I love what I do, is seeing and hearing the customer’s reaction when they see their CharBella Cake creation. The look of utter happiness on the birthday child’s face or receiving feedback from a bride the morning after her wedding is what makes it worthwhile and so satisfying.
I pride myself on making all my cakes from scratch, using fresh ingredients and from years of tried and tested recipes, that I now hold close to heart.

I offer custom cakes that will have your guests talking for months, a professional and friendly approach and love hearing about your ideas and how we can make something really special for your special event.
As I commonly say when asked, I’ll give any cake design a go once! So please do not hesitate to contact me to start the conversation on your delicious cake or catering an event.
